Designed as a party-sized prepared mix which is packed with the tastes associated with Christmas time, rendering it ideal for your festive gathering. Save the extra syrup for breakfast cocktails, sweets, or for additional servings of the drink.
The Bikini Cocktail
Serves 10 people
To make the Citrus Syrup (yields 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar
Ingredients for the Premix (yields 850ml, serving 10)
400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (as made above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch
Directions
Making the Cordial: Put all the ingredients into a pot, bring to a simmer, agitating to dissolve. Next, take off the stove and leave to reach room temperature entirely. Decant into an sealable bottle, seal keeping it in the refrigerator, where it will keep for about four weeks.
Preparing the Batch Mix: Combine every liquid ingredients into one large bottle, leave to sit for 60 minutes, then strain best through muslin, to ensure it's fully clarified.
To serve: Add 85ml of your batch mix into your stirring glass packed with ice, and agitate lightly for a minute to cool it down. Strain to a cold coupe glass or similar, top with a few cranberries and finish with a brief mist of the essential oil above the glass.
